Herafter recipes for the sauces…      

Hot BBQ Sauce
  1. 2 tomatoes without skin in minicubes
  2. 1 little green paprika cut in fine slices
  3. 75g tomato concentrate
  4. 2 Tbsp vinegar
  5. 1 green shallot in cubes
  6. 3 garlic gloves gut in lamellar
  7. 2 fresh chillies cut in mini pieces
  8. 1/2 Tsp smoked paprika
  9. 1 Tbsp Molasse or canesugar
  10. 1 Pinch of cinnamon
  11. 1 Pinch of black cardamon
  12. 1/4 Tsp of salt
  13. Sunfloweroil
  14. Vinegar
  1. Fry in 2 Tbsp sunflower oil, spices shalotts, garlic, fresh chili.
  2. Add sirup or sugar until caramelized.
  3. Add tomato cubes, vinegar.
  4. Let simmer until cooked.
  5. Cool down before serving.

Mirabelles Chutney
  1. 500 g mirabelles
  2. 150 ml Appetizer Whitewine (Le Floc de Gascogne)
  3. 3 Tsp fresh curcuma in minicubes
  4. 1/2 green shallot in minicubes (2 Tbsp)
  5. 1 Tsp nigellas
  6. 1/4 Tsp garam masala
  7. 1/4 Tsp chili
  8. 1/4 hot curry madras
  9. Salt
  10. Sunfloweroil
  1. Fry in 2 Tbsp sunfloweroil the spices, than add the shalottcubes.
  2. Deglaze with Appetizer Whitewine.
  3. Add pitted mirabelles and let simmer until soft.
  4. If necessary add a bit of water.
  5. Mix with a hand blender.
  6. Cool down before serving.
