Golden Milk

Isaura Faria made me discover in her workshop the classic Ayurvedic beverage “Golden Milk” and I was curious and tried out some variations of it.

Hereafter i will explain how to fabricate a homemade Turmeric-based paste: the Golden Paste and the Golden Milk recipe.

I invented for you also some amazing drinks: The Iced Golden Milk, the Golden Mango Lassi the Golden Masala Chai and the Golden Apple Punch for cosy autumn days. Enjoy !

The yellow Turmeric, also called Curcuma or the “Indian solid Gold”,  has been known as a “healing spice ” and used for its antioxidant and anti-inflammatory properties over 4,000 years in India. In the traditional Indian system of natural healing Ayurveda, it is included among the “hot” spices, to which cleaning and energy-giving properties are attributed. Turmeric can help healing anything from sore throats, colds, flus and stomachaches to wound healing and treatment of abrasions and skin issues.
Nowadays, India is the world’s biggest producer and it consumes about 80% of the global crop.
While it is mainly dried turmeric that is used in India, in Southeast Asia, in Thai cuisine for example, use of the fresh, grated rhizome is widespread.

As Turmeric is not very soluble in water, it is generally consumed with a high-quality oil. It is also recommended that some ground black pepper be added to the turmeric, because the alkaloid piperine contained in the pepper increases the absorbability of curcumin several times.

Turmeric is also a very strong natural colorant and I always use 1⁄2-1 teaspoon as colouring powder when baking light-coloured eggless cakes, to give them a slightly yellowish colour. In my kitchen it is a mandatory ingredient in every curry !

Be aware;-) it can color also your tableware and cooking tools and once on hands or white cotton it is quiet difficult to wash away….

So first I will show you how to make easily a turmeric paste – The Golden Paste,
which you can keep about 2-3 weeks in the refrigerator or longer in the freezer.
Taken orally the Golden Paste provides health benefits to humans as well as animals.
Use it for curries, soups, salats, smoothies, yogourts and of course the very famous Golden Milk.

The Golden Milk is a comforting and relaxing drink before bedtime and it’s also extremely nutritious.

Ingredients for the Golden Paste:
-1/2 cup of organic ground turmeric (60 g)
-1 cup of filtered or springwater (250 ml)
-1/2-1 tsp of fresh grounded black pepper
-1/4 cup cold pressed organic coconutoil (75g)
– 1/4 tsp salt
Preparation:
Mix the water with the turmeric powder in a stainless steel pot and slowly heat it up and stir for 6-10 minutes until you get a thick paste. Add the additional ½ cup water if it is too thick.
Add black pepper, salt and oil and continue stirring until all the ingredients are fully mixed in together.
Allow the paste to cool. Store in the refrigerator in a jar for up to 2-3 weeks.

How to make Hot Golden Milk:

Ingredients:
– 1 cup vegetal milk (250 ml) (coconut, almond ,…)
– 1 tsp of Golden Paste
– 1 pinch of ceylon cinnamon, vanilla, green cardamon or fresh ginger
– 1 pinch of fresh grounded black pepper
– 1-2 tsp of agave or organic brown sugar
Preparation:
In a stainless steel pot, slowly heat, but do not boil the milk and the Golden Paste by mixing with a whisk.
Sweeten with Agave. Flavor with either a pinch of cinnamon, vanilla, green cardamon or fresh ginger. Add a pinch of grounded black pepper before serving.

How to make iced Golden Milk.

Ingredients:
– 1 cup vegetal milk (250 ml) (coconut, almond,…)
– 1 tsp of Golden Paste
– 1 tbsp fresh lemon juice
– 1 tsp finely grated fresh ginger
– 2 pinches of green cardamon powder
– 1 pinch of fresh grounded black pepper
– 1-2 tsp Agave or organic brown sugar
– Ice cubes
Preparation:
Whisk milk, golden paste, sweetener, ginger, lemon juice, cardamom in a small bowl until sugar has dissolved.
Let infuse 5 min. Strain through a fine-mesh sieve. Fill a glass half with ice and add the mixture. Add a pinch of grounded black pepper before serving. Serve with a slice of lemon.

How to make Golden Mango Lassi.

Ingredients:
– 3/4 cup of cold bio soy yogurt (180 g)
– 1/4 cup of cold fresh/frozen mango pieces
– 2 tbsp of cold fresh lemon juice
– 1 tsp of Golden Paste
– 1/2 tsp finely grated fresh ginger
– 1 pinch of green cardamon powder
– 1 pinch of fresh grounded black pepper
– Eventually 1 pinch of salt
– Eventually 1 tsp Agave or organic brown sugar
Preparation:
Add all ingredients into a blender and pulse until smooth. Fill in a glass and serve with a slice of lemon.
Variation: add 1 tbsp of Mint- very refreshing !

 How to make Golden Infusion

Ingredients:
– 1 cup water (250 ml)
– 1 tbsp fresh lemon juice
– 1 tsp of Golden Paste
– 1 pinch of ceylon cinnamon, vanilla, green cardamon or 1 tsp of fresh ginger cut in rough sticks
– 1 pinch of fresh grounded black pepper
– 1-2 tsp of agave or organic brown sugar
Preparation:
In a stainless steel pot, slowly heat, but do not boil the water and the Golden paste by mixing with a whisk.
Flavor with either a pinch of cinnamon, vanilla, green cardamon or fresh ginger and let infuse on a medium heat 5 min.
Strain through a fine-mesh sieve. Add a pinch of grounded black pepper before serving. In the end add fresh lemon juice. Serve in a tea mug and sweeten with Agave.

How to make Golden Masala Chai

 Ingredients:
– 1/2 cup vegetal milk (250 ml) (coconut, almond,…)
– 1/2 cup water
– 1 tsp fresh ginger cut in rough sticks
– 1 tsp of Golden Paste
– 1 pinch of grounded green cardamom pods. fresh grounded black pepper and gloves
– 1 ceylon cinnamon stick
– 1 tea bag of organic black tea or 1 tsp of black tea from the Portuguese Azores
– 1-2 tsp of agave or organic brown sugar
Preparation:
In a stainless steel pot, slowly heat, but do not boil the milk + water and the Golden paste by mixing with a whisk.
Add the chai spices and let infuse on a medium heat 5 min. Strain through a fine-mesh tea-strainer or similar.
Add the tea bag and let infuse 3-5 min. Serve in a tea mug and sweeten with Agave.

How to make a Golden Apple Punch
Ingredients:
– 1 cup organic apple juice (250 ml)
– 1 tbsp fresh lemon juice
– 1 tsp fresh ginger cut in rough sticks
– 1 tsp of Golden Paste
– 1 ceylon cinnamon stick
– 1 pinch of fresh grounded black pepper
– Eventually 1 tsp Agave or organic brown sugar
Preparation:
In a stainless steel pot, slowly heat, but do not boil the apple juice and the Golden Paste by mixing with a whisk.
Add the spices and let infuse on a medium heat 5 min. Strain through a fine-mesh tea-strainer or similar.
Add a pinch of grounded black pepper before serving. Add Lemonjuice and sweeten eventually with Agave. Serve in a tea mug with a slice of Orange.
